Since our chickens are laying eggs in overtime I’ll probably be posting a few new egg recipes. Here is one that my mom made for us all the time when I was growing up.
Eggs & White Sauce
6 hard boiled eggs
1 cube butter
4 T flour
2 c. milk
Melt butter then add flour. Stir to make paste, making sure there are no lumps then slowly add milk. Bring to a boil, stirring constantly.
Crumble yolks and set aside. Chop whites and add to thickened white sauce. Serve white sauce over toast and sprinkle crumbled yolk, salt, and pepper on top.

1/2 c. milk
14 saltines, crushed
2 T dried minced onion
2 t. dried parsley flakes
1 lb. lean ground beef
1 jar (12 oz.) beef gravy
2 T ketchup
2 t. Worcestershire sauce
1/4 t. pepper
In a large bowl, combine the milk, saltines, onion, and parsley. Crumble beef over mixture and mix well. Shape into four patties. Place in an 8-in. square baking dish coated with nonstick cooking spray.
In a small bowl, combine the gravy, ketchup, Worcestershire and pepper; pour over patties. Bake, uncovered, at 350 degrees for 50-55 minutes or until meat is no longer pink.
Serves 4
For some unforseen reason we’ve had a few meatloaf type dishes lately and this was a nice variation. It can be altered to be very calorie-friendly, using fat-free milk, fat-free saltines, and fat-free gravy.

I found this in my Fix It and Forget It cookbook
1-1/2 c. sliced carrots
1 large green pepper, chopped
1 medium onion, chopped
2 T. quick-cooking tapioca
2-1/2-3lb. chicken, cut into serving-size pieces
8 oz. can pineapple chunks in juice
1/3 c. brown sugar
1/3 c. vinegar
1 T soy sauce
1/2 t. instant chicken bouillon
1/4 t. garlic powder
1/4 t. ground ginger (or 1/2 t. freshly grated ginger)
1 t. salt
Place vegetables in bottom of slow cooker. Sprinkle with tapioca. Add chicken.
In a separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger, and salt. Pour over chicken.
Cover. Cook on Low 8-10 hours.
Serves 6
Serve over cooked rice.
This was a great dish and so easy to prepare! It had a sweet taste but not too much so and the chucks of pineapple made it perfect.
