BBQ Sauce

BBQ Sauce

3 small cans tomato sauce
1/4 cup minced onion
1/2 cup brown sugar
1 tsp. freshly ground black pepper
1/2 tsp. dry mustard
1 tsp. salt
1 Tbsp molasses
1 Tbsp corn syrup
1/4 tsp. cayenne pepper
1 tsp. garlic powder
2-3 tsp. liquid smoke

Mix all ingredients and simmer in a medium size saucepan for an hour stirring occasionally.

This is a very good BBQ sauce that I used to do my BBQ ribs in the Crockpot.  It was a little on the spicy side (keeping my kids in mind) so I added a big squirt of ketchup while it was still in the saucepan.  Next time I’ll remember to add less cayenne or omit it altogether.  


Red Enchilada Sauce

Enchilada Sauce

2 Tbsp vegetable oil
2 Tbsp flour
1 Tbsp chili powder
1/2 tsp. cumin
1/4 tsp. garlic powder
1 tsp. salt
8 oz. tomato sauce
2 c. water

Combine first three ingredients in a saucepan on medium heat and cook for one minute. Add remaining ingredients, bring to a boil then simmer for 10 minutes.

Makes about 3 cups
